Tofu Stir Fry
A 'meat free' throw together meal. As usual, one recipe is never repeated quite the same in our household and 'measuring' ingredients isn't a strong point, so the below is just a guide - adjust the quantities to suit your taste buds. The vegetable type and quantity can be altered to suit whatever you have on hand/your preferences. The noodles can be replaced with rice, cous cous or any other carbohydrate of choice. My kids love the noodles and it helps encourage them to eat the rest of the meal! The roasted sesame oil helps to give good flavour to the meal and can be found in most supermarkets. Tofu can be found in the chilled section of the supermarket near the cheese and yoghurts. If you've never cooked with tofu, perhaps now is the perfect chance to try!
Ingredients
Firm tofu (300g)
1/2 - 1 packet crispy noodles (140g)
1 large courgette sliced
Mushrooms (2 large handfuls) sliced
Broccoli (2 large handfuls)
Spinach (2 handfuls)
Sesame seeds (2 tsp)
Crushed ginger (2 tsp)
Crushed garlic (1 tsp)
Lemon juice (2 tsp)
Soy sauce (1 tsp)
Roasted sesame seed oil (1 tsp)
Cracked pepper to taste
Method
In a bowl, combine the garlic, ginger, sesame seeds, lemon juice, roasted sesame oil, soy sauce
Slice tofu and place in above bowl. Stir seasoning through tofu to coat and set aside
Pre heat fry pan with a little roasted sesame oil (1-2 tsp)
Add sliced mushroom, courgette and broccoli to fry pan and stir
Add tofu to fry pan and stir through the vegetables
Add spinach to the fry pan at the very end and stir through until just wilted.
Remove from heat
Add cracked pepper to taste
Place crispy noodles (or rice/cous cous etc) on dinner plates
Place stir fry mixture over the top
Serve
