Homemade Muesli
Enjoyed at breakfast or as a snack throughout the day, this muesli is loved in our household. We hope you enjoy it to.
Ingredients
5 cups oats
1 cup wheatgerm
1/2 cup flaxseed flour (optional)
1 cup chopped dried fruit (we used dried dates and apricots. You could add seeds/nuts too)
1 T manuka honey
1/2 cup walnut oil (walnut oil has a delicious flavour and we’re lucky to have this ‘on tap’ from Uncle Joes in Marlborough (AKA Mum and Dad). Other oils would be fine to use too).
Method
Mix dried ingredients together in one large bowl (including dried fruit).
Heat honey to melt it. Add oil to honey and stir.
Pour oil/honey through the dry ingredients and stir.
Spread mixture out evenly over large oven tray/dish (preferably one with sides!) lined with baking paper.
Place in oven at 180 degrees C for 10-15 minutes, or until slightly golden. Stir regularly to ensure even baking (and watch it doesn’t burn!)
Remove from oven and leave to cool on tray. Stir it every now and then to assist cooling.
Store in airtight container once 100% cooled.
Enjoy with milk/yoghurt/your favourite toppings!
* Everyone has their own level of ‘crunch’ they enjoy with their muesli. Adjust bake time to suit.
